For us, pecan pie is more than a dessert—it is a memory. Growing up, pecan pie was Maree’s favorite pie. Our grandmother, Jane Faust Carter, had a pecan tree in her backyard, and Maree and I grew up picking pecans, helping her crack them, watching the pecan pieces become part of something delicious, and then enjoying the best part of all— eating pecan pie. Her kitchen always felt warmer when a pecan pie was in the oven, and her pies made the family meal feel more complete. An avid baker known for her delicious pecan pies, she brought care, patience, and sweetness to family, church, and club gatherings.
Jane Faust Carter’s Pecan Pie Tradition
When we think about our grandmother’s pecan pies, we also remember the simple ingredients and trusted baking process that made those pies taste like something straight from heaven. Jane Faust Carter always used light Karo syrup in her pecan pies. Light Karo gives the filling a milder, cleaner sweetness with slightly vanilla flavor, allowing the pecans to shine. Dark Karo can also be used and will create a deeper, more caramelized flavor with a richer color. Some bakers even mix light and dark syrup for balance, but for our family, light Karo is part of the tradition.
Classic Pecan Pie Recipe
Ingredients
1 unbaked 9-inch pie crust
1 cup light Karo corn syrup
3 large eggs
1 cup sugar
2 tablespoons of butter, melted
1 1/2 tablespoon of vanilla extract
2 cups pecans (Make these generous cups. It is always good to add a few more pecans
for grins and giggles. Pecan pie can never have too many pecans.)
Directions
Preheat oven to 350°F.
In a mixing bowl, stir together the light Karo corn syrup, eggs, sugar, melted butter, and vanilla until well combined.
Stir in the pecans.
Pour the filling into the unbaked pie crust.
Bake for 60 to 70 minutes, or until the filling is set and the center springs back lightly when touched.
Cool for about 2 hours before slicing and serving.
Pecan pie itself has deep roots in Southern food traditions. Early recipes appeared in the late 19th century, and the dessert grew in popularity during the 1930s when corn syrup recipes helped make the pie a familiar favorite in kitchens across the country. Over time, pecan pie became a symbol of comfort, celebration, and home.
